We are a small boutique company obsessed with quality control and we only want you to have the very best. Because of this our supply chain can be affected by seasonal variation, and limited availability of top quality animals.
Weights will vary depending on time of year and other factors, and there may be some periods when your favourite cut is not available. How to defrost and prepare our product

Without opening the original package, put it in the refrigerator to defrost for 2 days
It can then be left unopened for 4 - 5 days.
Once the original package is opened the product should be used within 2-3 days.

We snap-freeze  in the most technically advanced manner to assure maximum quality.
This also allows for more comfortable consumption period (up to 2 years) and a consistently perfect natural product.

Meat should be taken out of the refrigerator, packaging removed, 1-2 hours prior to cooking to allow it to come up to ambient room temperature. (16-22º)

Cook the French rack whole on a medium heat in a large pan browning each side for approx. 30-40min. Spoon and baste with the oil and juices regularly during cooking. 
You can also begin with searing in the pan and finishing off in the oven at 180c for 20 min.
Cover with foil and towel and rest for 6-7min before slicing off each individual rib for serving. Barbequed is fabulous too, same cooking time and presentation.

Great when cold the next day salads and snacks. Rich and lean this meat shouldn't be overcooked. Simple is best though can be served with flavorsome meat sauces such as red wine, pepper or mushroom. Sauces made from forest berry fruits like redcurrant sauces work well too. 
Our kangaroo fillet is easy to prepare and should be served rare and presented like any other red meat.
